ULusófona Launches Innovative Canteen Waste Valorisation Project

Between March and June, Lusófona University began a pioneering research project aimed at valorising the organic waste generated in the campus canteens. The main aim of this study is to collect fruit and vegetable peel waste and turn it into extracts with high bioactive value, capable of showing beneficial properties for human health, such as antioxidant and antimicrobial capacities.

The project has the collaboration of research professors Elisabete Mauricio, Cristina Guerra and Adília Charmier, as well as the active participation of project student Ane and several students involved in the Eco-Schools programme. The research seeks not only to identify the properties of these extracts, but also to explore their safe application in cosmetic and nutraceutical products, as well as analysing the economic viability of this innovative form of reuse.

This study promises to make a significant contribution to sustainability and innovation in the area of food waste, in line with Lusófona University's ecological and social responsibility practices.
